True Hatch chiles are only grown in the Hatch Valley of New Mexico, where fields of colorful chiles stretch along the Rio Grande River. Hatch chiles boast a fruity, faintly smoky flavor, with a subtle sweetness & mild heat level. Hatch chiles start off as deep green color & turn red as they mature. Red Hatch chiles are said to be sweeter & slightly hotter but less intense than Green Hatch Chiles. We use only 100% red Hatch chiles for our Red New Mexico Hatch Chile Powder.
